(100% Shiraz)-Coonawarra Shiraz sourced from our own estate is made first into a dry red style and matured on its light yeast lees for several months. The wine is re-fermented under pressure to allow for the natural carbon dioxide to be dissolved into the wine to create the effervescence than bottled under pressure after the liqueuring that adds to the creaminess of the palate.
