Governo style

Chiantigiane re-created this ancient Tuscan wine making process. This vinification style was called “Governo” (Meaning that crushed Chianti grapes which are left to dry on the vines are added toward the end of the fermentation process). The use of these overripe grapes leads to a future release of sweet noble polyphenols into the must wine and an increase in the alcoholic strength, extracts, glycerin, and smoothness.
