Mustiaio
The farm “ Il Mustiaio ” is situated in the centre of a hilly amphitheater, crowned by spellbinding medieval settlements which slope toward the sprawling plains of Maremma Toscana. The origins go back more than one hundred years. This arid spread of land is a breathtaking setting ideal for vineyards, olive groves, and the breeding of Maremman horses.
The vineyard faces southwest toward the sea, and its rocky, claylike soil and plentiful year-round sunshine make it especially suited to the cultivation of grapes. The grapes are harvested by hand and the winery receives them within minutes, keeping both their freshness and primary flavors intact.
Their cellars age the best wines of the year in oak barrels (“ tonneaux ”) which are hand-made by an Austrian craftsman. These barrels are slightly larger than the typical barriques, allowing the wines to evolve slowly with a more balanced exchange between wood and wine.
