Description
(97% Shiraz, 3% Viognier) The grapes for this wine were grown in the ancient “terra rossa” red soils of Heathcote in central Victoria. These rich spoils provide the classic “white pepper” character that is synonymous with Shiraz from this region. The growing season enjoyed warm, dry days and cool evenings, which resulted in fruit with great concentration of flavour, goodnatural acidity levels and lovely balance. The Shiraz crushed into open vats along with a small parcel of Viognier (3%), co-fermented under cool temperatures, and hand plunged twice per day. The wine completed temperatures, and hand plunged twice per day. The wine completed fermentation in French oak barriques followed by 12 months further maturation before blending and bottling
